Our Story

Our heritage is more than just a place our ancestors came from. Edelweiss is our way of keeping our deep roots alive and sharing them with friends, neighbors, and visitors from near and far.

George Baier, a trained butcher and sausage maker from Germany, moved to the Pacific Northwest in 1959. In 1981, he and his wife Marylou purchased the deli and built the business on high-quality products sold at a fair price — a tradition Tony and Tom carry on today.

Nearly every sausage and meat product imaginable is handmade on-site. We also accommodate custom meat preparation and smoking. Tony's wife Rochelle manages operations and sources rare sweet treats from Germany and Europe. Michelle handles catering.

Our Meats

Fine handcrafted meats are the hallmark of Edelweiss. Nearly every sausage and meat product imaginable is handmade on-site in our Portland deli.

Sausages

Traditional German and European sausages made fresh in our shop. Our selection includes German bratwurst, weisswurst, knockwurst, landjager, pepperoni sticks, pizza loaf, and rosemary garlic bologna — each with its own character, flavor, and style passed down through generations of butchering tradition.

Cured Meats

Old-world cured and smoked specialties prepared with time-honored techniques. Look for wine cured salami, schweinebauch (stuffed bacon), smoked hams, speck, and pepper-crusted roasts. Many items are aged and seasoned for deep, authentic flavor.

Deli Meats & More

Our deli case is filled with sliced-to-order meats, pâtés, jerky (including Thai chili and clover honey varieties), and specialty loaves. We also carry imported European cheeses, groceries, sweets, house-made mustards, and Bavarian condiments. Custom meat preparation and smoking available upon request.
