Our Story
Our heritage is more than just a place our ancestors came from. Edelweiss is our way of keeping our deep roots alive and sharing them with friends, neighbors, and visitors from near and far.
George Baier, a trained butcher and sausage maker from Germany, moved to the Pacific Northwest in 1959. In 1981, he and his wife Marylou purchased the deli and built the business on high-quality products sold at a fair price — a tradition Tony and Tom carry on today.
Nearly every sausage and meat product imaginable is handmade on-site. We also accommodate custom meat preparation and smoking. Tony's wife Rochelle manages operations and sources rare sweet treats from Germany and Europe. Michelle handles catering.
